?VEGAN JAPCHAE?

Ingredients:
Glass Noodles
1 Onion
4 Cloves of Garlic
2 Carrots
1 Bell Pepper
5 Cremini Mushrooms
Quarter of a Purple Cabbage
Handful of Spinach
Green Onions

Sauce?:
1 tbsp Sesame Oil
1 tsp Ground Ginger
1 tbsp Cornstarch
1/4 cup Brown Sugar
1/3 cup Soy Sauce
1/4 cup Water
1 tbsp Chili Garlic Sauce
1 tbsp Rice Vinegar
Sesame Seeds

Instructions:
WASH ALL THE VEGGIES!!
Bring a pot of water to boil.
Julienne the onions, mince garlic.
Cut up the carrots and bell pepper into matchsticks. Cut up the mushrooms and the purple cabbage. Dice the green onions.
In a hot pan add sesame oil, onion, and garlic. Cook for about 5 minutes. Add in the rest of the veggies. Add a little bit a water and cover, steam, and stir for another 5 minutes.
In a small bowl, mix together the ingredients for the sauce.
Cook the glass noodles.
After the veggies are cooked, add the spinach. Once that’s cooked down, add the noodles and the sauce. Mix together.
Serve and enjoy?

~top with extra sesame seeds, green onions, and maybe some sriracha~
