VEGAN JAPANESE CURRY WITH RICE 🍛⠀

ANOTHER SURPRISING ASIAN VEGAN PRODUCT! You can literally whip up a cauldron of this and it’ll feed an army!! 😂⠀

RECIPE AS FOLLOWS:⠀

Pic #1: It only requires a couple of ingredients – potatoes, carrots, an onion and fried tofu puff 🧅⠀

Pic #2: Chop & boil potatoes and carrots for about 7-9 min till they’re slightly softened. Drain & leave aside🥕⠀

Pic #3: You can find these deep fried tofu puff in your local Asian grocery shops, I usually buy a load and just freeze them 😛 cut the tofu cubes in half and leave aside ⠀

Pic #4: This is the curry cubes I use. Jap curry tends to be on the sweeter side so even though it says medium hot on the packaging, it’s not spicy tbh💁🏽‍♀️ I got these off amazon🌱⠀

Pic #5: Add a bit of oil in a huge pot (if you’ve making a huge portion like me), add in the onions and stir fry till just slightly brown. Add in the tofu and stir it around for a min or two. Then proceed to add in the potatoes & carrots. Add water to cover all the vegetables in the pot. Bring to boil. Chop up desired amount of curry cubes and add it. Bring it down to a simmer until desired curry consistency is reached! ⠀

Pic #6: Plate up with steaming hot jasmine rice (or sushi rice) and there you have it!! ⠀
