Vegan jambalaya 🙌🏼⠀

How cute are these new @traderjoes bamboo bowls?!

Ingredients:⠀
2 cups vegetable broth⠀
1 can finely chopped tomatoes⠀
1 bell pepper⠀
1 white onion⠀
Tablespoon minced garlic⠀
1 package @beyondmeat hot Italian sausage⠀
Jasmine rice⠀
Green onion⠀
Olive oil⠀
Salt⠀
Pepper⠀
Garlic powder⠀
Paprika⠀
Cajun seasonings⠀

Method:⠀
Sauté your bell pepper and onion in a hot skillet with your olive oil and minced garlic⠀
Season well with your salt, pepper, garlic powder, paprika and Cajun⠀
Once cooked, add your vegetable broth and chopped tomatoes and simmer on low for about an hour ⠀
Cook your rice⠀
Cook your vegan sausage⠀
Serve the veggie broth / tomato sauce and sausage over the rice and top with your fave toppings! I used green onion and some extra pepper 🤩⠀
