VEGAN ? Jamaican Jackfruit Tacos ?
FOR THE JACKFRUIT:
-2 20 oz cans of jackfruit, in water (not syrup)
-1 small red onion,thinly sliced
-2 cloves garlic, minced
-1 tablespoon olive oil
-3/4 cup BBQ sauce
-2 teaspoons smoked paprika
-1/2 teaspoon paprika
-1 teaspoon cumin
-1 teaspoon liquid smoke
-juice from 1/2 a lime
-a pinch cayenne pepper
YOGURT SAUCE:
-1 cup soy or nut yogurt, I used almond
-1/2 teaspoon garlic, minced
-salt & pepper to taste
OTHER INGREDIENTS:
-6 corn tortillas
-Romain lettuce
-steamed corn
-cilantro
-jalapeños
-avocado
-lime
DIRECTIONS:
1. Drain and rinse jackfruit and place in a mixing bowl. Use 2 forks and shred jackfruit until it resembles a pulled pork texture.
2. In a large pan heat olive oil over medium heat. Add garlic and cook for 1-2 minutes.
3. Add red onion and cook for another 2-3 minutes.
4. Add jackfruit and cook for 1-2 minutes. Add BBQ sauce, spices, liquid smoke, and lime juice.
5. Stir until well combined. Cook for about 10 minutes. Stir every few minutes.
6. Make the yogurt sauce. Add yogurt, garlic, salt and pepper to a bowl. Whisk until well combined. If you prefer a thinner sauce add a tablespoon or so of plant milk until desired thickness.
7. In a separate pan heat tortillas for about 1-2 minutes each side
8. Serve with lettuce, cilantro, jalapeños, avocado, steamed corn, and top with yogurt sauce and lime juice.
