VEGAN 🌱 Jamaican Jackfruit Tacos 🌮 ⁣


⁣FOR THE JACKFRUIT:⁣
⁣-2 20 oz cans of jackfruit, in water (not syrup)⁣
⁣-1 small red onion,thinly sliced ⁣
⁣-2 cloves garlic, minced ⁣
⁣-1 tablespoon olive oil ⁣
⁣-3/4 cup BBQ sauce ⁣
⁣-2 teaspoons smoked paprika ⁣
⁣-1/2 teaspoon paprika ⁣
⁣-1 teaspoon cumin ⁣
⁣-1 teaspoon liquid smoke ⁣
⁣-juice from 1/2 a lime ⁣
⁣-a pinch cayenne pepper ⁣


⁣YOGURT SAUCE:⁣
⁣-1 cup soy or nut yogurt, I used almond ⁣
⁣-1/2 teaspoon garlic, minced ⁣
⁣-salt & pepper to taste ⁣


⁣OTHER INGREDIENTS:⁣
⁣-6 corn tortillas ⁣
⁣-Romain lettuce ⁣
⁣-steamed corn⁣
⁣-cilantro ⁣
⁣-jalapeños⁣
⁣-avocado ⁣
⁣-lime ⁣


⁣DIRECTIONS:⁣
⁣1. Drain and rinse jackfruit and place in a mixing bowl. Use 2 forks and shred jackfruit until it resembles a pulled pork texture. ⁣
⁣2. In a large pan heat olive oil over medium heat. Add garlic and cook for 1-2 minutes. ⁣
⁣3. Add red onion and cook for another 2-3 minutes. ⁣
⁣4. Add jackfruit and cook for 1-2 minutes. Add BBQ sauce, spices, liquid smoke, and lime juice. ⁣
⁣5. Stir until well combined. Cook for about 10 minutes. Stir every few minutes. ⁣
⁣6. Make the yogurt sauce. Add yogurt, garlic, salt and pepper to a bowl. Whisk until well combined. If you prefer a thinner sauce add a tablespoon or so of plant milk until desired thickness. ⁣
⁣7. In a separate pan heat tortillas for about 1-2 minutes each side ⁣
⁣8. Serve with lettuce, cilantro, jalapeños, avocado, steamed corn, and top with yogurt sauce and lime juice. ⁣
