Vegan Jackfruit Bolognese 🍝

Ingredients:
* 200g Jackfruit (natural, sliced)
* 1 tbsp olive oil
* 2 cloves of garlic (chopped)
* 2 onions (small; finely sliced & chopped)
* salt and pepper
* 1 stick celery (finely chopped)
* 2 carrots (finely chopped)
* 10g tomato paste
* 1/2 cup red wine
* 1-2 rosemary branches
* 300-400g spaghetti
* 3-4 fresh tomatoes (sliced)
* Dried oregano
* Bit water (optional)

Instructions:
– In a large saucepan heat the olive oil over medium heat.
– Once the oil is hot, sauté the onions.
– Add the carrots along with the celery and sauté them about 3 minutes.
– Add the garlic and the jackfruit and cook until the jackfruit is browned.
– Add the tomatoes and the tomato paste, stir and allow it to cook.
– Add the wine and let it simmer away.
– Sprinkle in some dried oregano, rosemary branches, salt, and pepper and bring everything to a boil.
– Then turn the heat down and let it simmer with a lid ajar for 2-3h stirring it once in a while.
– While the sauce simmers, cook pasta according to the directions.
