VEGAN GREEN CURRY – this new recipe is now live on the blog, you can find the link for it in my bio. It’s vibrant, bright, slightly sweet and absolutely flavor packed. It takes about 15-20 minutes to make, from paste to the actual curry, so this will be perfect for your next weekday dinner. You can multiply the curry paste measurements and freeze the paste into single portions, so whenever you feel like making a curry you’ll have this ready to go, that’s what I usually do. One more thing: if you’re one of those people that hate coriander because it tastes like soap to them, this recipe might not be up your alley, it being very coriander forward, but if you’re not one of them, then you’re good to go. The curry in the photo has carrots, edamame, green beans, zucchini and red bell peppers and I served it with some rice noodles. You can use any time of vegg or protein you please! Thank you to @chickitchenvietnam who gave me some helpful pieces of advice and made a similar version of this, but with some proper ingredients I couldn’t possibly find in a formerly communist country like lemongrass, kaffir lime leaves and things of that nature, check out her version of the recipe!
