Vegan, gluten free, refined sugar free and oil free peanut butter cookies! Just 7 simple ingredients.
Fun fact: date sugar is not actually sugar but dried dates ground into a powder. Works great for baking, just increase the liquid content or decrease the dry ingredients.
1/2c peanut butter (or almond or sunflower butter)
1/2c date sugar
6T almond milk, room temperature
1/2t vanilla extract
1/2c oat flour
1/2t baking soda (or baking powder)
Pinch of sea salt (optional, do not add if your peanut butter is salted)
Combine peanut butter (look for a peanut butter that has only dry roasted peanuts as the ingredient) and date sugar in a mixing bowl. Stir in almond milk and vanilla extract. Then mix in oat flour, baking soda and a pinch of sea salt. Shape the dough into balls and place on a baking sheet lined with parchment paper. Use a fork to flatten in a cross cross pattern. Bake for 10 to 13 minutes at 350f. Makes 12-15 cookies.
