VEGAN GINGERBREAD PEOPLE 🎄👇⁠

We’ve got a perfect recipe to get you in a festive mood! Delicious gingerbread cookies! They are soft in the middle and crunchy on the edges. Yum! Yum! Yum! Recipe by @vegangirlboss.⁠

Ingredients:⁠
🍪 gingerbread base:⁠
– 1 flax egg (1 tbsp flaxseed with 2 tbsp water)⁠
– 100g coconut sugar⁠
– 3 tbsp organic molasses ⁠
– 140g unsalted vegan butter (block)⁠
– 350g plain flour, plus xtra for dusting⁠
– 1 tbsp ginger powder⁠
– 1/2 tbsp cinnamon⁠
– 1 tsp baking soda⁠
🍰 icing:⁠
– 300g icing sugar⁠
– 1 tbsp aquafaba⁠
– 1 1/2 tbsp lemon juice⁠
⠀⁠
Method:⁠
1. Combine 1 tbsp flaxseed with 2 tbsp water, set aside for 5 min to thicken.⁠
2. Place the butter, coconut sugar and molasses in a medium saucepan over a low heat and stir until melted. Transfer to a large mixing bowl and stir in your flax egg.⁠
3. In a separate bowl mix together flour, ginger powder, cinnamon and baking soda. Add the dry mix to the bowl of wet ingredients, stir with a wooden spoon until well combined.⁠
4. Form a ball of dough and refrigerate it for about an hour.⁠
5. Roll out the dough on a lightly floured surface to a 5 mm thickness. Cut out as many gingerbread people as you can. Bring the scraps together and re-roll to cut out some more.⁠
6. Place them on 2 trays lined with baking paper, leaving enough room around the cookies.⁠
7. Place the trays in a freezer for 10 min. Meanwhile, heat the oven to 200C/180C fan.⁠
8. Bake the cookies for 10-12 min. Leave to cool completely.⁠
9. Make icing by mixing icing sugar with aquafaba and lemon juice in a medium bowl until thick and creamy. Decorate the gingerbread using a piping bag.⁠
10. Leave the icing to dry for a couple of hours. Enjoy!⁠
