Vegan Gingerbread French Toast Sticks πŸ“

Ingredients:
β€’ 80g banana, mashed
β€’ 140ml unsweetened almond milk
β€’ 1/2 tsp sweet ground cinnamon, 1/4 tsp all spice, 1/4tsp ground nutmeg & ginger.
β€’ 1tbsp ground milled flaxseeds
β€’ 130g rustic wholegrain bread

Method:
1. In a large shallow bowl, mash the banana and mix with the milk, spices & flaxseeds
2. Slice the bread into strips and place in the batter mixture to soak for 5 minutes, then turn over and soak again.
3. Heat up a frying pan on medium and lightly coat with oil. Place the soaked bread sticks on the pan, leaving them to cook per side for 5 minutes before flipping over. If you try to flip too soon, the mixture will just come away from the bread.
4. Stack with fresh berries and drizzle or dip with @sweetfreedomuk cinnamon syrup 😍
