Vegan Ghorme Sabzi~ herb stew with fried tofu~one of the most delicious persian dish 😋
.
Ingredients: 1 cup of dried ready Herb Mix (sabzi), 1 package firm tofu, 3 dried lemons (poke holes in them with a fork), 1 medium onion finely diced, 1/2 teaspoon turmeric, 1 cup of cooking oil or olive oil, 
1 cup of kidney beans (Sadaf), 1/2 teaspoon of salt, minced garlic, saffron for rice
.
Directions: soak herb mix in water for 1 minutes then fry the herb mix, stir it constantly until it turns dark green (not burnt). Then put it aside
.
Add 5 cups of water to a pot. Add the beans, and bring to boil then bring the heat to medium and let the beans cook. In the mean time, fry your tofu in oil. Then cut them in small cubes. Fry chopped onions until golden brown. Add minced garlic & turmeric. Then add tofu to the mix. Stir them for about 3-5 minutes. Then set them aside
.
Once beans are cooked, add herb mix, dried lemons, salt, and tofu mix. Bring to boil, then turn the heat down. Let it cook for about 2 more hours. Add water if needed. Serve with saffron rice, fresh basil leaves, tahdig & raw onions 😋
