Vegan + GF Spaghetti Bolognese 🍝

The ultimate winter comfort food for me πŸ™‹πŸ»β€β™€οΈ I was never actually a fan of spag bol until last year and now I can’t get enough!

I used gluten free spaghetti & vegan mince to make this recipe both gf+vegan!

Ingredients [for 2]
β€’ 1 pack @vivavivera meat free mince [220g]
β€’ 200g gluten free spaghetti [i used @pastalensi]
β€’ 1 onion finely diced
β€’ 4 mushrooms finely chopped
β€’ 1 tsp of smoked paprika
β€’ 1 tsp of garlic granules
β€’ 1 tsp dried thyme
β€’ 1 tsp cumin [trust me]
β€’ 1 can of chopped tomatoes
β€’ Salt & pepper to taste

Method:
1. Fry the onion and mushrooms on a medium heat until the onions become translucent
2. Add in your paprika, garlic granules, cumin and dried thyme & stir
3. Add in your mince & 1/2 cup of water, turn the heat up slightly before reducing and cooking for 10 minutes
4. Add in your chopped tomatoes & salt, stir everything to combine, turn up the heat to medium [add more water if it’s too dry], and leave to cook
5. Cook for a further 5-7 minutes, until the sauce thickens completely

Serve with the spaghetti, some more dried thyme and chopped chilli! 🌢
