Vegan GF Ramen 🍜 ⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients 🥦 🥬🧅
-1 crown broccoli, cut into florets ⠀⠀⠀⠀⠀⠀
-1 med. yellow onion, diced ⠀⠀⠀⠀⠀⠀⠀⠀
-1 c. carrots, diced ⠀⠀⠀⠀⠀⠀⠀⠀
-1 c. kale, chopped ⠀⠀⠀⠀⠀⠀⠀⠀
-5 cloves garlic, minced ⠀⠀⠀⠀⠀⠀⠀⠀
-1 c. scallions, diced ⠀⠀⠀⠀⠀⠀⠀⠀
-2 tbsp. sesame oil ⠀⠀⠀⠀⠀⠀⠀⠀
-2 tbsp. coconut aminos ⠀⠀⠀⠀⠀⠀⠀⠀
-1 tbsp. olive oil ⠀⠀⠀⠀⠀⠀⠀⠀
-1 tsp. maple syrup ⠀⠀⠀⠀⠀⠀⠀⠀
-1 tbsp. white miso paste ⠀⠀⠀⠀⠀⠀⠀⠀
-1/2 tsp. garlic powder ⠀⠀⠀⠀⠀⠀⠀⠀
-1/2 tsp. onion powder ⠀⠀⠀⠀⠀⠀⠀⠀
-5 oz. shiitake mushrooms, sliced ⠀⠀⠀⠀⠀⠀⠀
-1 3” knob ginger, cut into cubes ⠀⠀⠀⠀⠀⠀⠀⠀
-1 12 oz. package extra firm tofu, cut into 1” cubes ⠀⠀⠀⠀⠀
-7 oz package GF noodles (@miraclenoodle )⠀⠀⠀⠀⠀⠀⠀⠀
-32 oz. low sodium vegetable broth ⠀⠀⠀⠀⠀⠀

Instructions ⠀⠀⠀⠀⠀⠀⠀⠀
1️⃣ Preheat oven to 400 degrees F. Whisk together 1 tbsp. sesame oil, 1 tbsp. coconut aminos, 1 tsp. maple syrup, 1/2 tsp. onion and garlic powder. Add mushrooms and marinate for ~20 minutes. Line baking sheet with parchment paper and cook mushrooms for 20-25 minutes.
2️⃣ Mix together 1 tbsp. olive oil with broccoli florets and carrots. Sprinkle with black pepper. Line baking sheet with parchment paper and cook at 400 degrees for 25 minutes.
3️⃣ Whisk together miso paste with 1 tbsp. sesame oil and 1 tbsp. coconut aminos. Add mixture to pan with garlic, ginger, tofu, and onions. Sauté until tofu is crispy on both sides. Add vegetable broth and bring to boil. Stir in kale and noodles. ⠀⠀⠀⠀⠀⠀⠀⠀
4️⃣ Remove from heat, take out ginger and top with scallions. ⠀⠀⠀⠀⠀⠀⠀⠀
