Vegan, Fluffy, Choc Chip BANANA BREAD! I’ve always loved making banana bread, it’s one of the simplest recipes ever and it uses ingredients you already have lying around. I mostly use oats and blend them up into oat flour for the base, making each slice perfect for long lasting energy!

INGREDIENTS:
Dry ingredients:
– 2cups oat flour
– 1/2 cup brown sugar
– 1 heaped tsp baking powder
– 1/2 tsp baking soda
– 1 tsp ground cinnamon
– 1 tbsp flax seeds (optional for denser consistency)
– vegan choc chips

Wet Ingredients:
-3 medium ripe bananas
-1/4 cup maple syrup
-1/4 cup melted coconut oil
-1/4 cup coconut milk
-1 tsp vanilla extract

Method:
1. Pre-heat oven to 180c and grease a loaf tin and line it with parchment paper.
2. In a large bowl, combine all your wet ingredients and whisk together until smooth.
3. In another bowl, combine all your dry ingredients apart from the chocolate chips. Then pour your wet mixture into your dry ingredients and whisk until smooth. Then fold in your chocolate chips.
4. Pour batter into prepared loaf and bake for 40- 50 minutes, or until golden. If unsure, poke a skewer through and if it comes out clean, then the banana bread is baked all the way through.
5. Once removed from the oven, let it cool for 20 minutes before removing it from the tin, then you can cut it into slices and enjoy!
