✨Vegan Fajita Lentil Casserole✨
wanted to make something fun with @sabormexicano brand new homemade salsa and this hit the spot 🤤🤤
I use hacks like frozen veggies and microwaveable grains that make this casserole SO EASY to put together in just a few minutes 👏🏻
✨1 cup brown rice (I use a microwaveable frozen bag from @traderjoes )
✨1 cup lentils (I use a microwaveable pack from @traderjoes )
✨1 cup frozen peppers (so easy to use!)
✨1/2 red onion diced
✨1 tomato diced
✨1/2 cup frozen corn
✨1 cup @sabormexicano medium homemade chunky salsa
✨1 cup vegan shredded cheese
✨1/2 cup vegan sour cream (I used @kitehillfoods )
✨1/2 packet fajita seasoning (or a couple tbsp)
✨Extra red onion
✨Extra shredded cheese
✨Chips for dipping
✨For frozen veggies, microwave until thawed and pat dry to get rid of excess water. You can always use fresh if you want!
✨For the rice and lentils, microwave according to directions.
✨Combine all filling ingredients in a bowl and mix well.
✨Pour into an oiled casserole dish.
✨Bake at 400 degrees for 20 minutes.
✨Add more shredded cheese, red onion, and cilantro on top. Bake for 5-10 more minutes.
✨Add avocado and tortilla chips for extra goodness!
