VEGAN ENCHILADAS CASSEROLE!!!
These delicious, soul-warming enchiladas only need a few staple ingredients that you probably already have at home! I made them in only 30 minutes and they are to die for!
2 garlic cloves, minced
1/2 diced white onion
1/2 red bell pepper chopped
1 can of black beans
1 small can of corn
2 tbsp Tomato purée
2 tbls olive oil
1 cup of tomatoes sauce
Salt and pepper
Heat olive oil and once warm, add onions and garlic. sauté until fragrant and add chopped red bell pepper and cook until soft. Add black beans, corn and all spices to the pot. I like to blend mine but that is totally optional!
Lastly, add 2 TBSP of tomato purée.
Meanwhile, Preheat oven to 170° spread some tomato sauce into baking tray and Fill in the tortillas and fold one side over filling and continue to roll enchilada into itself. Top with tomato sauce and sprinkle with some vegan cheese.
Bake for 15 min, let sit 10 min before serving!!!
Serve with some vegan sour cream, avocado, lime and lots of cilantro.
