Healthy low cal Gnocchi veggie mix
1. Gnocchi (1/2 cup)
2. Red bell pepper (32g)
3. Carrots (247g)
4. Cauliflower (132g)
5. diced tomatoes (1/2 cup)
6. Tomato sauce (2 floz)
7. Canned avocado oil (spray 0 cal)
————— NOTE —————
– Enough for a huge single serving
– OPTIONAL red pepper flakes
– Play around with seasoning, I just used my favorite ones

————DIRECTIONS —————
1. Dice red bell peppers and cut cauliflower, carrots and tomato to desired size
2. In a large skillet spray oil and sprinkle salt add lemon & pepper seasoning and garlic powder (optional but adds great taste)
3. Meanwhile add 1 and a half cups of water in a pot to boil, then pour gnocchi in for 2 minutes. Once cooked, strain and place in the skillet.
4. Add in the skillet your carrots, red bell pepper and cauliflower till slightly tender
5. Once slightly tender pour in your tomatoes with a little bit of water and your tomato sauce
6. Take off heat until most of the liquid has evaporated
7. (OPTIONAL) Mix in a couple of red pepper flakes to make it a little spicy
