One of my favorite things to do is recreate classic / nostalgic dishes into vegan treats! Shoutout to my partner for coming up with this idea, seeing as we had all the right ingredients. We were able to make 3 at home with the below, and y’all it DID NOT DISAPPOINT.

Recipe – makes 3 Crunchwraps:
▫️3 large flour “burrito” tortillas
▫️3 street taco tortillas for the center (or you could use extra burrito tortillas and cut to scale)
▫️1/2 package of @impossible_foods beef (any beef substitute will work)
▫️ taco seasoning – we use @flavorgod but you can use cumin, paprika, cayenne, garlic & onion powder instead!
▫️@traderjoes Cashew Fiesta Dip
▫️Tortilla chips – tostada works too!
▫️@tofuttibrands sour cream
▫️3 pieces of iceberg lettuce, chopped
▫️6 cherry tomatoes – but any tomatoes chopped will do
▫️1/4 red onion, chopped
▫️your favorite cheese – we used @so_delicious cheddar & @goodplanetfoods mozzarella

Heat oil in pan over medium heat – add beef and chop up in pan to crumbles. Season meat with what you have on hand. Cook until browned, should take about 7-10 mins. Heat up approx 2 tablespoons of Cashew Fiesta dip (or nacho cheese sauce of choice) in 30 sec increments in microwave til runny. Once beef is finished, remove from pan and wipe pan clean for last step. Lay down large tortilla & layer! First add beef in center of tortilla. Then mix in 1/3 of your cashew dip. Add tostada or tortillas on top of beef to cover. Spread sour cream over crunchy layer. Add lettuce, tomatoes, onions to your preference! Sprinkle on shredded cheese and top with small tortilla. At this point, warm up your pan again with some oil or butter over medium low heat. Fold in large tortilla around the small one and quickly put the wrap in pan, small tortilla opening side down. Brown on each side for 2-3 mins depending on your pan. Keep an eye on it so you don’t brown. Enjoy!
