My ultimate comfort food is a massive bowl of creamy pasta ?
This recipe is now a staple in our home. It’s so incredibly easy, and tastes so indulgent but without all the cream.
All you need is 6 ingredients and a blender.
▪️Pasta of your choice for 4-6 servings
▪️2 cups cherry tomatoes
▪️1 cup unsalted cashews
▪️5 garlic cloves, minced
▪️1 tsp chilli flakes (optional)
▪️Salt and pepper to taste
▪️Add the cashews to a small bowl, then add the boiling water – make sure all the cashews are covered
▪️Let the cashews soak for a minimum of 1 hour
▪️When the cashews are done soaking, strain and rinse them, discarding the liquid.
▪️Cook pasta as per packet instructions
▪️While the pasta is cooking, add the cashews to a blender or food processor along with the tomatoes, garlic, chilli flakes, salt, and pepper, then blend until smooth. Blitz until smooth
▪️Drain pasta but reserve 1 tbsp of the pasta water
▪️Add the tomato sauce to the pot with the pasta with the tbsp of pasta water, then stir to coat the pasta with sauce.
▪️Cook for 5 minutes on low-medium heat
▪️Remove from the heat, then garnish with fresh chopped basil. Enjoy!
