Vegan chocolate mousse with raspberry coulis 🍫 🌱

I made a bunch of these for a dinner party I was hosting for my study team 🤓

They’re ridiculously easy to make and people cannot believe they’re vegan and made from tofu!

At the bottom I’ve hidden some raspberry coulis. Raspberry and chocolate is literally my fave combo 😩🙌

The following amounts were good for 5 people…

To make the raspberry coulis:
1 punnet of raspberries (~200g)
1/2 tbsp stevia (or you could use 1 tbsp sugar)
1 tbsp lemon juice
2 tbsp water
Add everything to a small saucepan and bring to the boil and then simmer for 10 mins until thick, allow to cool

For the mousse:
2 blocks silken tofu
2 bars dark chocolate (2x ~85g)
4 tbsp maple syrup (I used a zero calorie version)

Gently melt the chocolate in a heatproof bowl over a simmering pan
Blend together the tofu, melted chocolate and maple syrup

Divide out into portions and leave to cool in the fridge!

I topped mine with some crushed up oreos and some more raspberries but you could totally get creative ✨
