Vegan Chocolate Chip Cookies
Who doesn’t love a warm, ooey gooey chocolate chip cookie fresh from the oven? Here’s my recipe for a vegan version, which contains no animal products or dairy. For extra chocolatey goodness, you can add an extra 1/4 cup of semi-sweet chocolate morsels to the dough 🙂
1 1/2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cups light brown sugar, packed
1/3 cups granulated sugar
1/2 coconut oil
1/4 cup almond butter
1 teaspoon vanilla extract
1/4 cup unsweetened vanilla almond milk
1/2 cup Enjoy Life semi-sweet chocolate chips (or another vegan chocolate chip brand of your choice)
1. Preheat oven to 350 degrees F. Lightly grease two cookie trays with coconut oil.
2. In a large bowl, combine the dry ingredients and set aside.
3. In another large bowl, cream together the brown and granulated sugars with the coconut oil using a hand mixer for 2-3 minutes. Add the almond butter and vanilla extract and combine again for another 2 minutes. Slowly add the almond milk and combine.
4. Add the dry ingredients to the wet mixture and fold in gently using a spatula.
5. Stir in the chocolate chips and incorporate evenly.
6. Use a 2 tablespoon ice cream scoop to scoop dough onto your prepared cookie trays. This recipe will yield approximately 12-14 cookies.
7. Bake for 15 minutes until just golden. The cookies will be soft when you take them out of the oven but will get firm as they cool. Cool completely on a wire rack before enjoying.
