VEGAN CHILLI CON CARNE ⠀

Made this delicious Chilli Con Carne with the leftover vegetables in the fridge ?⠀

Ingredients:⠀

2 cans kidney beans ⠀
1 can diced tomatoes ⠀
4 mushrooms, diced⠀
1 carrot, diced⠀
1 red capsicum, diced⠀
1/2 onion, diced⠀
1 cup green beans, diced⠀
3 garlic cloves, minced⠀
1 zucchini, diced ⠀
1 fresh chilli, finely chopped ⠀
1/2 cup parsley, finely chopped ⠀
1 tsp ground cumin⠀
1/2 tsp mustard seeds, ground⠀
Salt, to taste ⠀

2-3 Servings ⠀

Instructions:⠀

Start off with rinsing vegetables and cutting them into shapes as listed in ingredients section. ⠀

Place onions into a big saucepan on medium heat and fry until golden. Add all other raw vegetables, cook for another few minutes. Add the beans, diced tomatoes, cumin, ground mustard seeds and salt. Give it a good stir and let it simmer for about 7-10 minutes.⠀

You can serve it with corn-free, gluten-free tortillas or gluten-free pita bread. I actually had it with a simple salad. ?⠀
