All the vegan and gluten free food lovers, look out for this recipe.
This recipe makes a very good dinner on a rainy or cold day. A very healthy dish which is protein packed and keep you filled for long if you want to cut on those extra carbs

Recipe
Ingredients:
▶️250 gm of red or black kidney beans, boiled
▶️One medium onion, chopped
▶️ Two medium Roma tomatoes, chopped
▶️1/2 cup bell pepper, chopped into small pieces
▶️1 Serrano pepper, sliced
▶️1/2 cup corn
▶️1tbsp oil
▶️2 cups water

Seasoning and spices
▶️1/2 tsp red chilli powder
▶️1/2 tsp cumin- powder
▶️1/2 tsp coriander powder
▶️Salt and pepper to taste

Garnishing:
▶️Avocado slices
▶️Lemon slices
▶️Cilantro leaves
▶️GF corn chips

Method:
Heat oil in a pan and saute all the veggies until they are soft. Make sure to not over cook them. Add the kidney beans, spices. Add water and let it simmer on low heat for 15 minutes or until the soup mix becomes thick. You can also blend some of the mixture to get a thick consistency. Garnish it with chips, avocado and lemon on top. Serve in a bowl and enjoy it warm!
