VEGAN CHILI & CORNBREAD

My girl @kiana.kim and I had a relaxing Halloween night and decided to be festive and make chili and corn bread 🤤It was so easy and fun to make! Grab a bestie and make this for your next cozy meal 🍂✨

Deets: Cornbread
– 2 cups almond milk
– 1/3 cup vegan butter
– 1 cup Flour
– 1/2 tsp baking powder
– 1/2 cup sugar (used monk fruit)
– 2 cups cornmeal (this was a bish to find)
– 1 tsp salt
– 2 tsp apple cider vinegar (don’t know why but it did something)
– Mix wet and dry ingredients separately and then all together in one bowl
– Add oil to baking pan and then cook for 45 minutes at 350 degrees
Deets: Chili
– 1 1/2 cups vegetable broth
– 2 cans of tomatoes
– 1 can garbanzo beans
– 1 can black beans
– 1 can kidney beans
– Cut up onions, carrots and celery
– 1 jalapeño
– Chili seasoning
– Taco seasoning
– Start with sautéing the onions and jalapeño with some oil and water to make a base
– Once browned, dump all ingredients and let sit for 20 minutes with an occasional stir and voilá you got the easiest and yummiest vegan chili
– We added cheese on top (vegan for me) and Kiki did reg cheese and sour cream
Serve with corn bread and vegan butter and this will be your go-to cozy meal 😇
