🐥Vegan Chickpea Omelette with mushroom stuffing🐥

I have tried my share of vegan omelette recipes over the years and this one is my current favorite! Give it a try!

2 c chopped mushroom (I used shiitake mushrooms)
4 cloves minced garlic
1/2 chopped big onion
1 tsp oil
salt and pepper to taste (I like to add a lot a pepper)
1 sprig curry leaves (optional)
-Add oil to a pan on medium heat. Add garlic, sauté until golden brown for a min or two. Add onion and curry leaves, sauté for 2 min. Add mushroom and sauté for 4-5 min until they are cooked and slightly golden brown. Add salt and pepper, cook for a 1-2 min, turn off stove and keep aside.

🌿Omelette batter🌿
1/2 c chickpea flour
2 tbsp nutritional yeast
2/3 c water
1/4 tsp salt
A pinch of black salt/kala namak
1-2 tbsp of finely chopped cilantro
-Whisk above ingredients in a bowl until smooth

1 tsp of oil
Vegan cheese (I used @violife_foods shredded mozz)
-To a skillet on medium heat, add some oil and coat your pan to avoid the batter from sticking
-Once hot, pour around 2/3 cup of batter and gently swirl it around
-After 2-3 mins, flip it gently. Allow to cook for another 2-3 mins
-Flip it again. Add some vegan cheese, some mushroom stuffing on top of the omelet. Allow 1-2 min for the cheese to melt slightly
-Fold the omelet and gently transfer to the plate
-Eat as is or top it off with some chopped spring onions, ground pepper, sriracha, ketchup, mashed avocado etc.
