VEGAN CARBONARA ?

This is to the pasta lovers out there… this beautiful mushroom, spinach and pea carbonara is comfort food without the guilt?
.
The ‘cheese’ sauce is made out of cashews, almond milk and raw garlic packing a load of health benefits mixed into your pasta? check out the ingredients and method below.
.
Ingredients:
Gluten-free pasta
4 handfuls of spinach
1/2 pack of chestnut mushrooms
1/2 pack shiitake mushrooms ?
2 handfuls of peas
Fresh parsley to serve

Vegan ‘cheese’ sauce:
1.5 cups cashews
3/4 cup plant milk (I used almond milk)
2-3 cloves garlic ?
(Soak the cashews for 30 mins in boiling water. Drain and add all ingredients into a blender and blitz until smooth)
.
Method:
(Ensure you make the vegan cheese sauce first)
1️⃣Put the pasta on first as this dish is so quick to make.
2️⃣Chop the mushrooms, wash and add into a frying pan. Fry for 5-7 mins. Then add in the peas and spinach.
3️⃣Drain and wash the starch off the pasta. Then add in the ‘cheese’ sauce and stir until well combined.
4️⃣Add vegetables into the pasta and stir well.
5️⃣Serve up with fresh parsley in your favourite pasta bowl and enjoy this comforting pasta recipe ???
