VEGAN CAESAR ? with a creamy tofu dressing, sourdough croutons and chopped roasted almonds

Ingredients:
Salad: 1 head romaine lettuce (shredded), 1 large handful dark leafy greens (roughly chopped), 1 thick slice sourdough (cubed), 1 tsp garlic powder, 1 tsp mixed dried herbs, 1 tsp olive oil
Dressing: 120g tofu, 50ml water, 1/2 lemon (juice), 2 tbsp olive oil, 2 tbsp nutritional yeast, 1 tbsp apple cider vinegar, 1 tbsp caper brine, 1 tbsp capers, 1 tbsp mustard, 1 tsp garlic powder, 1/2 tsp black pepper, 1/2 tsp salt
To serve: 1 tbsp roasted almonds (chopped)

Method:
1. Blend all the dressing ingredients until smooth.
2. Mix the sourdough cubes either the garlic powder, dried herbs and olive oil, then toast in a pan until golden.
3. Cover the greens and croutons in dressing (I used about half and stored the rest in the fridge) and mix well, then top with the chopped almonds and enjoy!
