8 ounces pasta noodles! (Any you like)
2 tbsp vegan butter
1 cup broccoli, chopped small “CHEESE SAUCE”
1 cup Yukon gold potatoes, peeled and chopped
1 cup carrots, peeled and chopped
1/2 cup raw cashews (if you have a weak blender soak the cashews over night in water OR soak in hot water for 20 minutes)
1/2 cup plain unsweetened almond milk or any plant milk
4 tbsp nutritional yeast
3/4 tsp smoked ground paprika
1 tbsp lemon juice
1/2 tsp salt
1 tbsp white miso paste
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp ground pepper
1.Boil or steam the potatoes and carrots in a large pot for about 25 minutes or until soft.
2. Once the potatoes and carrots are tender and cooked place them in a blender as well as all the other ingredients and blend until smooth. Taste the sauce and adjust ingredients as needed with more salt, pepper, paprika etc… 3. Cook pasta according to the directions on your pasta box.
4. Meanwhile steam or sauté broccoli. Once broccoli and pasta is cooked, drain (reserving 1/4 cup pasta water). Add cooked pasta & broccoli to a pot then pour in sauce, pasta water, 2 tbsp vegan butter. Serve & enjoy warm.
