Vegan Banana Cumb Muffins
My apartment smelled like bananas for hours!🍌💗


-3 overripe bananas (the blacker the better)
-3/4 cup granulated sugar
-2 cups all purpose flour
-1/4 cup vegetable oil
-1/2 tsp vanilla extract
-1 tsp baking soda
-1 tsp salt

Crumble Topping:
-1/3 cup all purpose flour
-2 TBS brown sugar
-1/2 tsp cinnamon
-2 TBS COLD vegan butter

-1/3 cup icing sugar
-3 tsp plant milk

Preheat oven to 360. Grease muffin pan (I use avocado oil spray). Mash bananas in a bowl, then add sugar, oil, and vanilla till we’ll combined. In another bowl add all the dry ingredients together. In a third bowl, mix all the crumble ingredients together. It’s easiest to combine with your hands until they turn to little crumble pieces. Pour the mashed banana mixture into the combined dry ingredients. Mix (don’t overmix) and pour this into the muffin tins about 3/4 full. Take your crumbles and put them on top of each filled tin. Place in oven for 25 minutes. Mix together your glaze ingredients. Wait till muffins are completely cool and then drizzle glaze over top!
