Vegan Banana Bread with Chocolate and Pecans

I’ve posted the recipe in the past, but this one I use oat flour …. just because 😬

373 gr / 3 medium-large ripe bananas
80 gr nut butter (I use peanut butter)
2 tbsp flax seeds + 6 tbsp water
80 gr brown sugar
130 gr oat flour
170 gr all purpose flour
2 gr salt
2 gr baking soda
4 gr baking powder
40 gr roasted & chopped pecans
50 gr chopped dark chocolate bar
1 tsp demerera sugar (for topping)
1 tsp oil (for topping)

The more oat flour = the drier & denser your bread will be. If you prefer softer & moist bread, use 300 all purpose flour

1. In a big bowl, peel the bananas n mash them into a rough paste. Add sugar, mix well. Add flax egg, mix well. Then add nut butter.

2. In a separate bowl, combine the dry ingredients: oat flour, AP flour, baking soda, baking powder, salt.

3. Prepare the loaf pan either by lining parchment paper or oiling the pan. Preheat oven.

4. Add dry ingredients into wet batter. Fold until there’s minimal dry spots. Add chopped pecans (reserving some pieces for toppings and chopped chocolate.

5. Pour batter (it’s quite thick, more spoonable than pourable) into pan. Level the top, add the reserved pecans. Sprinkle demerera sugar on top, then drizzle with oil.

6. Bake 45 min in 180C oven. After baking, let it rest for 10 min before removing from pan. Let cool before slicing.
