I have been thinking about autumn and all the cosy 😊 feelings it brings. To reflect this, I’m changing the mood of my photos a little to go with the seasonal vibes – still colourful and delicious thou 🌈!

So, this is my lasagna sheet pasta plate. I boil water, salt and oil together, adding lasagna sheets divided into thirds, stirring to make sure they don’t stick. This is a great trick to achieve that ravioli style dish. Rinse the water and keep separated on a tray, to avoid them sticking together

INGREDIENTS
.
-2 Peppers (I used red and yellow)
-100ml Pine Nuts
-60ml Cashew Nuts
-100ml Olive Oil
-1 Tablespoon Lemon Juice
-Salt and Pepper
.
METHOD
.
-Roast peppers on 200 Degrees Celsius for 30 minutes until lightly charred
-Pan roast cashews and pinne nuts
-Combine peppers, cashews, lemon and olive oil in a blender
-Add salt and pepper for flavour
