🫑🌽🍅Upgraded Tofu Scramble🌽🍅🫑

This is one of my favourite lunches to make the night before- quick, simple and delicious!
You can serve it with pretty much anything- I used couscous because it’s quick to cook!

Ingredients:
– 1/2 block silken tofu
– 1/2 block normal tofu
– 1 cup sweetcorn
– 1 cup diced bell peppers
– 1 cup spinach
– 1 cup sliced mushrooms
– 1-2 stalks celery- diced
– I also added some leftover sliced leeks
– 1 can black beans
– Juice of one lemon
– Spices: paprika, ground cumin, ground coriander, garlic granules, salt, black pepper
– Dried basil
– Pine nuts (or any seeds of your choice)

Stir fry the veggies in a little oil until soft and then crumble the tofu and fry with the veggies. Add in the black beans, spices and lemon juice. After around 7 mins add in the pine nuts.
Garnish with fresh herbs and serve either hot or pack it for lunch the next day!
