?Ultimate Vegan ‘No Beef’ Bolognese??
Hearty sauce on top of favorite pasta is always my number one comfort food as it’s difficult to imagine anything quite as satisfying, isn’t it? ?
I love all pasta sauces without exception – fresh and citrusy in summer and more savory, heavy and rich in winter time. After yesterday’s unexpected winter storm I decided to make another warming dish and went for a nice, ‘meaty’ Bolognese with some fettuccine pasta – it turned out absolutely perfect?? Now I’m stuffed and have zero leftovers ?
Most vegan Bolognese recipes call for mushrooms, but none are needed for this one ☝?
Ingredients ✅
? 1 pack (12 oz) @traderjoes Beef-less ground beef (fully thawed if using frozen)
? 1 medium onion, very finely chopped
? 3 cloves garlic, pressed
? 1 large carrot, finely grated
? 1 tbsp oil
? 1 can diced tomatoes (blend it if you like smooth tomato base or leave as is if you prefer chunky)
? 1/2 cup red wine (Cabernet works the best)
? 1 tbsp organic tomato paste
? 1/2 cup walnuts, blended into a course meal
? Salt and cracked pepper to taste
? 1 cup veggie broth (can be substituted with water but broth makes it more flavorful)
? 2 tbsp reduced sodium soy sauce or Tamari
? 1 tbsp oil
? Salt and cracked pepper to taste
? 1 tbsp Italian seasoning (or 1 tsp dry oregano + 1 tsp dry thyme)
? 3 tbsp nutritional yeast (I love @anthonysgoods ) or 1 tbsp beef-less stock as a sub of you have none
? Fresh parsley (optional)
Directions ✅
1️⃣ In a large skillet heat oil on medium, add onion, garlic and grated carrots, sauté for 3-4 min till veggies begin to soften
2️⃣ Add tomato paste, mix and cook for 1 more min
3️⃣ Add wine and cook till it’s fully reduced
4️⃣ Add beef-less beef, diced tomatoes, veggie broth, seasoning, salt, pepper, walnuts, and soy sauce, mix well, reduce heat, cover and simmer for 15-20 min till sauce is thick
5️⃣ Throw in nutritional yeast, cook for 2-3 min more. Finish off with parsley and remove from heat. Let sit covered for 5 min
6️⃣ Cook pasta according to instructions, add sauce on top and serve hot.
