Ukrainian courgette and potato stew (sous) with homemade ciabatta

Stick with me for this. I get that the title doesn’t fill you all with excitement but it really should! It brings all the clichés out of me – it really is more than the sum of its parts! I’m thrilled we made a double portion and will reluctantly freeze it because I would happily eat it tomorrow. Given its simple ingredients it has no business tasting as good as it does – it’s witchcraft.

The recipe is from the wonderful @oliahercules and is taken from her first book ‘Mamushka’. Olia is on @sundaybrunchc4 tomorrow if you want to see what she is all about.

We didn’t have any crusty bread so I made some – who am I?! Once again used @paul.hollywood recipe and think its got some of the irregular air holes one looks for. I loved the tough crust. But moving the loaf from the side to the baking tray was pretty harrowing. It’s not unlike trying to transport water with your bare hands only the water is sticky, has taken two hours to make and can’t just be replaced by turning the tap on – I’d say it is a bread for adrenaline junkies.

All of it was worth the wait.
