sometimes you don’t have the time to be rustling around in the kitchen for ages but you still crave a freshly cooked meal!

Enter – ⏰ TWO TICKS TEA!

i’ve decided to rustle up a selection of my go-to dinners when i simply don’t have the time but still crave PROPA scran! Mum would always call us down to dinner as kids with the phrase “tea’s in two ticks!” which honestly… was actually just a ploy to get us to come down early and set the table… but the phrase stuck.

starting us off – this super easy and super tasty 🍄 SEITAN & MUSHROOM CLAYPOT. the seitan combined with oyster mushrooms gives a really meaty dish which soaks up the sauce be-YOO-tifully

Ingredients –

1/2 tsp veg oil
3 garlic cloves, crushed and chopped finely
200g seitan chunks*
120g chestnut mushrooms, quartered
120g oyster mushrooms, roughly torn
4tbsp tamari or soy sauce
2tbsp agave syrup
1/2 tsp salt
1tsp ground black pepper
rice or noodles to serve and spring onions for garnish

method –

Put a large pan or claypot over medium heat and add the oil
Cool Garlic for 3 minutes or until it starts to soften
Add all the mushrooms and cook for a further minute, stirring
Add in the seitan and cook for a further minute, stirring
Add remaining ingredients along with 3 tbsp of water, then cover and simmer over a low heat for 10 minutes.
Remove lid, check seasoning and then you’re good to go!

*Can substitute extra mushrooms (straw mushrooms work well but any can be used) if seitan is not readily available!
