Turmeric Latte Blondies πŸŒ»πŸ’›

If you know me you know I love turmeric and adding in hidden veggies in my baking so these were perfect and seriously delicious 🀍

Turmeric honestly has so many health benefits such as regulating blood sugar, being anti inflammatory and helping with relieving symptoms of inflammatory conditions, as well as it’s most active compound curcumin having many scientifically proven health benefits, such as potential to prevent heart disease etc.

These were honestly so delicious and such a great sweet treat when craving some thing sweet after dinner or just wanting a snack 🀍

Recipe was inspired from @naturally_nina_ but tweaked a few things myself πŸ₯°

Recipe 🌱
110g buckwheat flour
1 can chickpeas, drained and rinsed
1/2 cup pitted dates
2/3 cup unsweetened almond milk
2/3 cup applesauce, (I just used one pot of premade applesauce)
1 tsp natural vanilla extract
1/2 medium zucchini, finely grated
1 small carrot, finely grated
1 heaped tbsp turmeric latte mix I used @thrivingonplants recipe
2 tsp baking powder

1) Preheat oven to 180 degrees and line a tin with baking paper
2) Add the flour, baking powder, ground ginger and turmeric mix in a bowl and mix
3) puree the dates, chickpeas, apple sauce and vanilla in either a blender or food processor until smooth
4) combine the chickpea mix and almond milk with the dry ingredients until combined
5) gently Fold in the grated carrot and zucchini,
6) pour into baking tin and bake for 30-40 minutes until firm and golden on top (may need longer or less time depending on oven so just keep an eye on it)
6) let cool before slicing and enjoy πŸ’›
