Turkish Bulgur Balls (Fellah Köfte)

❤️This classic recipe is perfect for vegetarians and for feeding the whole family on a budget. I hope you love these as much as I do.❤️

▫️1 glass of finely ground bulgur (You can find it in a Turkish supermarkt and it is usually called “kısırlık bulgur” in Turkish)
▫️1 cup boiled water
▫️1/2 cup flour
▫️1 egg
For sauce;
▫️3 tablespoons olive-oil
▫️1 tablespoon tomato paste
▫️1 tablespoon red pepper paste
▫️2 cloves garlic, minced
How to make it?
▫️Put the bulgur in a large pan, add 1 glass of boiled water. Close the lid of the pan and wait 10 minutes.

▫️Once the mixture cools down, add the flour, salt, cumin and egg. Knead for 4-5 minutes.

▫️Sprinkle a little flour on a platter where you’ll place the balls.

▫️Roll the bulgur balls at the size of a cherry. Then push your little finger on the top to make it into a disk shape.

▫️Make all the balls and leave aside.

▫️Boil some water in a large pot.

▫️Gently drop the balls into the pan and let it cook on a medium heat about for 7-8 minutes.

▫️In the meantime, in another pan, put olive oil on medium heat. Add garlic, paprika and tomato paste and stir for 2-3 minutes. Add ½ cup of warm water and let it cook for about 5 minutes on medium heat.

▫️Remove the balls from water with a slotted spoon.

▫️Add your boiled balls to the saucepan. Very gently, stir for about 3-4 minutes.

▫️Serve topped with parsley.
