Tunisian stuffed peppers! (vegan)

Recipes serves 2. This was actually a meal kit I got this week which I just left certain ingredients out to make vegan. You need 2 green peppers, and cut them long ways refining the seeds/stem. Drizzle some avocado oil over the halves, and season with salt & pepper. Preheat oven to 425F. Then cut up about 8 mushrooms, and add those to the baking sheet (also with a little oil, salt/pepper). This will bake for about 20 min. While baking, add 1 tbsp of plant butter to a saucepan & then add a 1/4 cup of slivered almonds to toast. Then add 1/3 cup of scallion whites. Then add water/couscous, as directed on the package (you can use veggie broth instead of water for more flavor). Let couscous cook & then once it’s finished, fluff with a fork and add the baked mushrooms and 1 diced Roma tomato. Then stuff your baked green peppers with the couscous mixture. Next, drizzle some hummus dressing on top (hummus, a little water, salt/pepper). Lastly top it with some green onion & I added raw pepitas (pumpkin seeds) bc I had some in my cabinet!
