This simple roasted tomato white bean butter sauce is going to be your next obsession cause it’s oh-so good!
What you need⤵️
2 cups Cherry tomatoes
Canned white bean (I used navy)
1/2 Onion cut into wedges
2 cloves garlic
2 tbsp cold Vegan butter
If you don’t love gnocchi than use a pasta of your preference!!
2 cups small broccoli florets
1 tomato cut into chunks
Handful cremini mushrooms
Preheat oven to 400. Drizzle cherry tomatoes, 1/2 onion cut in chunks with olive oil and seasoning with salt and pepper. Roast for 25-30 minutes. Transfer to a blender and add 1/2 cup pasta water, 2 cloves garlic, canned beans, salt and pepper. Blend on high until smooth and creamy. Add two tbsp cold vegan butter and blend again until glossy. This makes a lot of sauce so you can divide into two containers.
I used mushrooms and broccoli to round out my sauce but use whatever veggie you like. Finish with a good drizzle of olive oil and lots of vegan cheese!
