Triple Chocolate Chunk Cupcakes 🤤😍 🍫these are by far the best vegan cupcakes I’ve ever made, plus are guaranteed to put a smile on your face and make your heart happy ☺️❤️
1 and 1/2 cups Flour
1/2 cup White Sugar
1/2 cup Brown Sugar *(can substitute coconut sugar for both white and brown for a refined sugar free option)*
1/2 cup cocoa powder
1 tsp Baking Soda
1 cup (240ml) Coconut milk
1 tsp vanilla extract
1/3 cup oil
1 flax egg (1 Tbsp ground flax seed mixed with 2 1/2 Tbsp warm water)
1 Tbsp apple cider vinegar
1/2 vegan chocolate chips (I used @lilys_sweets)
2 cans Chilled Coconut Cream (the cream on top of canned coconut milk) I used @thaikitchen
1/4 cup maple
1/3 cup cocoa powder
1️⃣ Preheat oven to 350 degrees
2️⃣ Make your flax egg by mixing 1 Tbsp flax seed and 2 1/2 Tbsp warm water in a small bowl and set aside.
3️⃣ Mix your flour, sugar, cocoa powder, and baking soda in a separate bowl.
4️⃣ Mix your coconut milk and apple cider vinegar together (I usually just mix it in the measuring cup) this creates a vegan buttermilk
4️⃣ Add your buttermilk mixture, vanilla, oil, and flax egg to your dry ingredients
5️⃣ Whisk until there are no lumps and add in your chocolate chips
6️⃣ Pour batter into cupcake holders and bake for 20-25 minutes.
7️⃣ While your cupcakes are baking make your icing by scrapping off the cream part of your chilled coconut milk. Whisk together your the cream, maple, and cocoa powder with an electric mixer until it becomes fluffy and there are no lumps.
8️⃣ Let your cupcakes cool entirely before putting your icing on. I melted some @lilys_sweets chocolate chips and drizzled on top of mine 😊
