Tonight’s post workout meal was a spicy, glazed tofu served with Jasmine rice and tenderstem broccoli 🌱💪 it was sooo needed and packed a nice punch 😍

2 X blocks of firm tofu
1 tbsp soy sauce
1 tbsp sesame oil
1/2 cup cornflour
1/4 tsp cayenne pepper
1/4 tsp salt
1/4 tsp pepper
1 bunch of spring onions

1 tbsp sesame oil
1 large garlic clove, minced
2cm fresh ginger, grated
4 tbsp soy sauce
3 tbsp maple syrup
2 tbsp rice wine vinegar
1/2 tsp chilli flakes

Toasted sesame seeds to serve.

*Preheat the oven to 220°
*Cut the tofu into cubes. Put 2 spring onions to one side, and cut the others into 2/3cm chunks.
*Whisk 1 tbsp soy sauce with 1 tbsp sesame oil until combined.
*Put the cornflour in a separate bowl and mix with the cayenne, salt and pepper.
*Dip the tofu in the soy mix and then the cornflour mix. Place the Tofu on a lined baking tray.
*Cook in the oven for 5 minutes, then add the chunks of spring onion and cook for a further 10 minutes.
*Whilst the tofu is in the oven, make the sauce.
*Heat a tbsp of sesame oil in a frying pan of medium heat, add the garlic and ginger and cook for 1 minute. Add the rest of the sauce ingredients and let it bubble away until it becomes a thick, sticky glaze.
*Once the tofu has cooked, put the spring onions to one side and tip the tofu into the sticky sauce.
*Once served sprinkle over toasted sesame seeds.
