Tonights Dinner Vegan Black Bean Burger With Sweet Potato Fr



Tonight’s dinner vegan black bean burger with sweet potato fries and slices of Avocado.

Ingredients:

* 1 tablespoon avocado oil or olive oil
* 1/2 cup yellow onion, diced
* 3 cloves garlic, chopped
* 1/2 Teaspoon chilli powder
* 1/2 Teaspoon dried oregano
* 1 Teaspoon ground cumin
* 1/4 Teaspoon cayenne pepper ( optional )
* 1/2 Teaspoon salt
* 2 15 oz cans black beans, drained and rinsed
* 1 cup gluten-free panko
* 1 egg
* 1/2 cup chopped cilantro

Toppings:

* Organic whole grain hamburger buns
* Avocado, sliced
* Tomato, sliced
* Lettuce
* Red onion
* Sriracha ( or vegan mayo )

Instructions:

1. In a small saute pan, over medium heat, saute the chopped onion and garlic for 5 minutes or until translucent and tender.

2. Add all the dried spices including the salt and mix to combine. Saute an additional 30 seconds to a minute and set aside.

3. In a large mixing bowl, add the black beans and with a mixer or fork or spoon, mixed until they are slightly ” mashed”.

4. Add panko bread crumbs and egg to the mashed black beans and mix to combine.

5. Add the onion-spice mix and fresh cilantro to the black bean mix and mix to combine.

6. Using your hands form 5-6 patties ( or more depending on your size of burger )

7. Heat oil in non-stick skillet pan ( enough oil to coat the bottom of the pan ) and in batches, saute burgers for about 6-8 minutes per side or until golden and crispy.

8. Serve and Enjoy!!
