Tonight for dinner ??????
Creamy lentil curry with avocado, red
rice, broccoli and cauliflower
Very tasty and full of nutrients!

Ingredients
-1 onion
-3 tbsp curry
-1/2 tsp each: coriander, turmeric, ground cumin,cayenne
-4 cloves garlic
-1 tbsp minced ginger
-1 cup dry red lentils
-1 14-oz can coconut milk
-1/2 cup vegetable broth/water
-salt, pepper, chili flakes

In a large pot, sautee the onion until tender, then add in curry, garlic, ginger, and spices plus some water to prevent sticking. Add lentils and coconut milk to the pot, then turn the heat to low
and cover the pot, stirring occasionally. Add broth/water as needed. Once the lentils are tender, after 10 minutes, season with salt, pepper, and chili
flakes . Serve warm ! Bon appetit!
