Tomorrow’s lunch sorted! Ingredients: Cous cous, roasted cherry tomatoes, roasted sweet potato, spring onions, spinach, 1 tsp smoked paprika, garlic granules, parsley. —

Recipe: cut the tomatoes in half, the sweet potatoes into small cubes and pop in a oven proof dish, drizzle some oil over the top and add on the parsley and smoked paprika. Put in the oven at 180• for 20 mins. Add 75g cous cous to a pan with 200ml of boiling water and cook for 5 minutes on a medium heat. Steam the spinach until wilted. Chop the spring onions and then Once everything is cooked add to a large bowl. Add the garlic and another tsp of smoked paprika and parsley.
