TOM YUM soup. Veganised of corse.
My brother gave me this recipe so I really owe it all to him @vilinuschef me and my friend @miss_rg_xo really fancied it the other day and he put this together so quick and easy and it was better than any I had tasted before. I made it today so go to my highlights to watch the method.
Please adjust ingredients to your taste and how many your are cooking for. This made a perfect amount me for and my daughter to have a big bowl each and then an extra one for me ??
3 inches of ginger
3 garlic cloves
2/3 of a whole scotch bonnet the rest will be used for garnish
2/3 of a bag of coriander
2 tablespoon of tomato purée
Blend these up in a food processor and this is your base for the soup.
Heat sesame oil in a pan and then fry off your soup a base for a minute or so.
Then add 1.5 litres of vegetable stock.
The juice of 2 limes
2/3 tablespoons of sugar
2 tablespoons of light soy sauce
Adjust to your taste but you need a good balance of sweet sour and salty
When your soup is boiling away
Prepare your rice noodles and any veg you want to add to the soup.
To serve fill a bowl with some rice noodles
Add your soup on top
I used bean sprouts on top of mine and then garnished with fresh chopped chilli, spring onion and fresh coriander. Oh and a wedge of lime.
