i’ve never tried this soup before but been meaning to for ages and wowww this was so good ! if you haven’t heard of it before it’s basically like a tomatoey thai red curry usually with mushrooms in it !

ingredients
– olive oil
– half an onion finely diced
– 3 garlic cloves minced
– 2 lemon grass stalks
– inch of ginger grated
– 2 fresh chillis sliced
– 3 tbsp red or green thai curry paste
– 2 tbsp tomato purée
– 1/4 to 1/2 can coconut milk
– 750ml veg stock
– 2 tbsp tamari
– 3/4 tbsp maple syrup
– juice of 1/2 lime
– handful of enoki mushrooms
– handful of shiitake mushrooms
– a few cherry tomatoes (optional)
– to serve: spring onions, fresh coriander

method
1. crush the lemongrass stalks under a knife to release the juices, cut the stalks into 2 inch pieces and then halved them
2. in a large saucepan add some olive oil and then the onion and lemongrass and cook until the onion goes translucent
3. add the grated ginger, sliced chilli (deseed the chilli of you want it more mild), garlic and fry for a few mins (i fried the shiitake mushrooms separately but if you just want to cook it in one pot add the mushrooms in now)
4. add the curry paste and tomato purée and stir to combine
5. pour in the veg stock, coconut milk (more or less depending on how creamy you want it) and the canned tomatoes, stir and bring to a boil then reduce to a simmer
6. add in the squeeze of lime juice, tamari, maple syrup, enoki mushrooms and stir
7. leave to simmer and stir every so often cooking until the soup becomes a darker orangey, red colour – maybe about 15 mins
8. serve with fresh coriander, more chilli, a few cherry tomatoes and spring onions
