Tom Yum Pancake! Want something different for breakfast, lunch or dinner? ?? I just use leftover vegies to make these super-easy, Thai-twist, crispy, savoury pancake ?????
Ingredients:
1 tsp Chef Na’s Tom Yum Paste
1 cup self-raising flour
1/2 tsp baking powder
1/2 tsp salt
1 tsp rice bran oil
1/2 tsp coconut cider vinegar
1 cup soy milk or your favourite nut milk
1 tbsp soy sauce
1 cup coarsely grated pumpkin (it can be zucchini, carrot, sweetcorn, sweet potato or potato)
1 cup chopped cauliflower (or broccoli, mushroom, frozen pea and spinach)
3 spring onions, thinly sliced (or any type of onion for natural sweetness)
Sweet chili sauce or vegan mayo to serve ?

Method:
Step 1. Sift the flour, salt and baking powder into a large bowl. Wisk togetherTom Yum Paste, soy milk, oil, vinegar and soy sauce in another bowl. Pour the Tom Yum mixture over the flour mixture and stir until combined. Add the grated pumpkin, chopped cauliflower and spring onion. Fold to combine.

Step 2. Heat a large non-stick frying-pan over medium-low heat. Add extra oil to the pan to grease. Drop small ice cream scoop or 1/3-cupfuls of mixture into the pan and spread to about 10cm. Cook for 3 minutes or until bubbles appear on the surface. Turn and cook for further 2 minutes or until golden and cooked through. Transfer to tray. Continue with some more oil and the remaining mixture to make 6-8 pancakes.

Step 3. Serve the pancake with sweet chilli sauce or vegan mayo! Enjoy ^_^
