Tofu Satay πŸ₯œπŸ₯‘😍

🀩Recipe 🀩 (serves 2)
Ingredients:
🍠 Ginger (1/4 tablespoon grated)
πŸ§„ 1 clove garlic (crushed)
🍯 1/2 tablespoon Mayple syrup
πŸ₯‘ 1/2 tablespoon soy sauce
πŸ’› 1/2 tablespoon mild curry powder
πŸ₯œ 2 tablespoons smooth peanut butter
πŸ₯’ 300g firm tofu
πŸ₯₯ 100ml reduced fat coconut milk
🍚 100g uncooked white rice
Method:

1. Mix garlic, ginger, syrup, soy sauce, curry powder and peanut butter in a bowl until combined. Add water if too stiff.
2. Cut the tofu into chunks and use 1/3 of the peanut butter mix as a marinade. Cover and leave for 3 hours or more.
3. Once the tofu is finished marinating, cook the rice to packet instructions.
4. Fry all sides of the tofu until crispy.
5. Gently start to heat the sauce 10 minutes before the rice and tofu are ready by adding the rest of the peanut mix and the coconut milk to a pan. Stir constantly until it thickens.
6. Serve by plating up the rice, then add sauce and place the tofu on top.

✨I served this with cauliflower and roasted red peppers tossed in a little curry powder, salt, pepper, garlic and onion granules. Lastly I sprinkled some crushed dry roasted peanuts on top! ✨

P.s. I had a lot more tofu than this I just wanted it to look pretty πŸ˜‚
