Tofu Broccoli and Mushroom Noodles.

I just love noodles they are such a treat. So simple but can make a dish stand out. This recipe is packed with flavour and will really fill you up. Great after a very busy day or a hard workout.

4 tbsp of soya sauce
2 tbsp of rice vinegar
2 tbsp of agave @thegroovyfoodcompany

1 x hoisin sauce
2x tbsp soya sauce
1tsp vegetable stock granules
1/2 cup of boiling water
1 teaspoon of flour

Stir fry
1 block of 400g tofu cut up into cubes
1 small Broccoli head cut up
150g of chestnut mushrooms sliced
1/4 red chilli cut up
1x garlic clove cut up
1tbsp ginger minced
Fat free oil spray
Desired amount of Cooked egg noodles I used about 200g.

Make the marinade and pour over the tofu.
Let marinade for 30 minuets
Steam the broccoli. Drain and set aside.
Fry the mushrooms and chilli in the oil spray.
When cooked add garlic and ginger. Cook for a further few mins and remove the from pan.
Then fry the tofu until it is crispy.
Add the cooked broccoli, mushrooms, chilly, garlic, ginger, then add the sauce and cook for a few minuets.
Finally add the cooked noodles.
Garnish with sesame, chilli and spring onion.
