TOFU AND MUSHROOM KORMA ?
Made this beeeeautiful curry for dinner tonight. Honestly really enjoyed it and thought it was real warm comfort food.
I ate this with @fullgreen.official cauliflower rice.

Ingredients:
– 1 pack of button mushrooms
– Firm tofu, pressed and cubed
– Parsley to serve

Korma sauce:
– 1 Tbsp oil, I just used sunflower
– 1 white onion, diced
– 1 thumb of ginger, grated
– 4 large garlic cloves, minced
– 2 tbsp tomato purée
– 2 tsp garam masala
– 1 tsp cumin
– 1tsp turmeric
– Chilli powder to taste
– Smoked paprika
– 1/2 tsp cumin
– Pinch ground cloves
– 3 cardamom pods
– 1 can of coconut milk (400ml)
– 1/2 cup vegetable stock
– 1 tsp brown sugar
– Salt and pepper to taste

Method:
– fry the onion, garlic and ginger until golden and soft in the oil
– Add all other ingredients and leave the cardamom pods to sit in the sauce, take them out at the end
– In a separate pan, fry your tofu cubes on each side until golden, and add the mushrooms
– Add the sauce and cook for an extra 3 minutes
