Nourish bowl with sweet and sour chickpeas, avocado, rice, zucchini, tomatoes, cucumber, hummus, sesame seeds and chilli flakes! This was the yummiest lunch that took around 15 minutes to put together.
Sweet and sour chickpeas recipe
1 tbsp olive oil
1/2 large red onion, diced
2 cloves garlic, minced
1 can chickpeas, drained and rinsed
2 tbsp tamari
2 tbsp rice vinegar
1 tbsp tomato paste
1 tbsp maple syrup
2 tbsp water
1 tbsp cornstarch
Heat the olive oil in a large pan over a medium heat, then add the onion and garlic. Cook for 2-3 minutes, until softened. Now add the chickpeas, tamari, rice vinegar, tomato paste, maple syrup, water and cornstarch. Cook for around 5 minutes, until the sauce thickens.
